I wanted to use up some red grapes sitting in the bottom of my fridge
Preheat oven to 180 degrees
Ingredients to get together to make the cake;
- 200g sour cream
- 1/2 cup sugar
- Cream in sugar and sour cream
- 3 Eggs
- 1 x Lemon
- 1.5 cups plain flour
- 1/2 tsp salt
- 1/4 tsp bicarb soda
- 1/4 tsp
Add whole 3 eggs, 1/2 a lemon juiced and 1 lemon zested
Mix on the highest with whisk attachment
You want to thicken and add volume before adding any dry ingredients
Once now light in colour, doubled in size and fluffy remove bowl to work the dry ingredients by hand
Use a spatula to fold in gently the sifted dry
1.5 cups plain flour
1/2 tsp salt
1/4 tsp bicarb soda
1/4 tsp
Grease a Bundt tin with oil
In the grooves at the bottom put a piece of fruit in each one, this time I used whole grapes
then add 1/3 of your mixture
then put some more fruit, then 1/3 and fruit and then last 1/3
Put cake in oven and cook for about 15 mins which will make it brown and raise, then turn down to 150-160 degrees and cooks for another 20 mins
This cake is very moist in nature, it can be eaten straight warm or cooled for later or even frozen.
We served this yummy cake with Ice-cream and warmed it slightly in the microwave
