1/2 a large pumpkin peeled and chopped into large cubes
4 shallots cut into large pieces
3 cloves garlic
6 sprigs of Thyme
Salt and pepper to taste
Saute all the about in a large heavy based pan, slightly brown then cover with water and stock til pumpkin is just covered
Boil til tender and then use blending wand to make nice and smooth
Check seasoning and adjust where needed and enjoy with fresh bread...
