Some of you may know I am allergic to corn but still love Mexican inspired food
This was great snack/ late lunch when i had 2 avocados needed using
I used 3 frozen wheat lebonese flat breads
Heat oven to 180 degrees celicus, cut the bread into chip sized pieces place on a tray and coat lightly with oil, salt and pepper
Cook in oven for about 10 mins
Chop a couple of ripe tomatoes into cubes, cut pickled jalapenos and sprinkle over the top of the cooked chips
I uses some hard cheese and some Mersy Valley tasty to sprinkle on top , put under grill til melted and toasty looking
Use 2 ripe avacados mash with 1 clove of garlic, lemon or lime juice about 2 tablespoons
Salt , pepper, and zest if desired.
Serve either as a share tray or individual serves and add a big dollop of avocado just before serving
